Did you know that takes less than 15 minutes you can prepare a tasty, healthy side dish using asparagus? Particularly when it’s in season, produce does not have to be heavily cooked and seasoned to be tasty and spring to summer is when asparagus is at its finest. It’s everywhere from farmers markets to grocery stores so grab a bunch and get cooking!
PS – did you know that in parts of Europe, asparagus is white and the New York Times did an amazing spread about it!
Scrumptious Sautéed Asparagus
1 ½ pounds fresh asparagus
1 tablespoon toasted sesame oil
Place asparagus spears in kitchen sink.
After rinsing, hold each spear with one hand at the base of the stalk and the other hand an inch or two farther toward the tip. Bend the spear. It will break at the point where the tender stalk starts to toughen. If it does not snap, move your hand a little farther up the stalk and bend again until the stalk breaks.
Place asparagus in skillet with 1 inch of water. Cover skillet, bring the water to a simmer and simmer for 2 to 3 minutes. Drain water. Add sesame oil to skillet with the asparagus and sauté the asparagus for a few minutes. Season to taste with salt and pepper.
These are delicious served hot, or at room temperature.
